SALAD IN DIJON MUSTARD
A big bunch of green leafy leaves
1/2 cup of cut capsicum
1/2 cup of cut onion
Dash of shredded coconut
2 tomatoes cut into quarters
DRESSING
Mix all the ingredients in a blender and pour over the salad just before serving. Enjoy!
1 heap teaspoon Dijon mustard
1/4 cup extra virgin first pressed olive oil
Lemon juice from 1 lemon
Pinch of Salt

Lots of people I spoke to love Pad Thai and recently I spoke to one of my sons and he said he has yet to taste a good proper raw Pad Thai. Then I thought to myself that if I can make a raw Pad Thai which means the dish is not going to be cooked and therefore since its nutritional value will add to the alkalinity in my body, it will be a real treat!

So this easy raw vegetarian dish uses zucchini for the flat rice "noodles" to create my own version of the Raw Pad Thai!

Those pesty tick bites!
Have you ever seen a tick? In 2010, while being a member of a support team for the BT1000 I was bitten by ticks in many places and unfortunately they had left 3 nasty bite effects on the back of my right shoulder, and 1 behind my right knee. I had been too busy with my responsibilities and role then that I neglected to attend to those tick bites immediately. Unfortunately I have been experiencing itchiness from those 4 pesty tick bites since then!
