Spicy Vegetarian Buffet

Happy 50th Birthday to Paul Madden!
Buffets are great to have when you are a food lover and eat a lot!  Well, I'm talking about myself and I love buffets!  Today I have put together the photos of a spicy vegetarian buffet prepared for Paul, my husband's 50th birthday on April last month!

Each dish was carefully selected to meet the palate and requirement of its nutritional value.  

The dishes were:

Cauliflower and pea curry



Serving size: Serves 2-4

 

Ingredients:


  • 1 tbsp extra virgin olive oil
  • 1 large (200g) red onion, sliced thinly
  • 3 cloves garlic, minced
  • 1 tablespoon finely grated fresh ginger
  • Korma curry paste: Process in a blender:

            4 teaspoons cumin powder
            2 teaspoon coriander powder
            3 garlic cloves, peeled
            5 cm piece ginger, peeled
            1/4 teaspoon cayenne powder
            2 teaspoon garam masala
            1/2 teaspoon Celtic sea salt
            2 tablespoons coconut oil
            2 tablespoon tomato puree

            1 small bunch fresh coriander, stalks and leaves
            2 fresh green chillies, seeded and sliced
            3 tablespoons shredded coconut
    • 4 whole tomatoes (quartered)
    • 1 cup (250ml) water
    • 300g butternut pumpkin, cut into 2cm cubes
    • ½  small (500g) cauliflower, cut into small florets
    • 1 cup (120g) frozen peas
    • 2 tablespoons cashew nuts
    • ½ cup loosely packed coriander leaves, for serving
    • Chapatti or brown rice for serving

    Joy's all time favourite dish!

    Ingredients:

    • 300 gm chick peas (soaked overnight in filtered water)
    • 3 sprigs fresh curry leaves
    • 1 tsp black mustard seeds
    • 1 onion (cut and finely diced)
    • 2 tsp Celtic sea salt

    Pineapple Curry

    This dish uses pineapple as your main ingredient, giving your curry a sweet and tangy flavour!
    Pineapple with capsicum

    Ingredients:

    • 4 green onions, sliced
    • 1 tbsp ginger, minced
    • 2-3 garlic cloves, minced
    • 1 red capsicum, seeded and sliced into thin strips
    • ½ -1 red fresh chilli, seeded and sliced
    • 1 pineapple (diced in cubes)
    • 2 tsp mild yellow curry powder (coriander, cumin, turmeric)
    • 2 tbsp fresh curry leaves, minced
    • ½ cup thick coconut milk
    • ½  tsp liquid amino (soy sauce)
    • Spring onions (garnish)

    Gluten & Wheat

    Eliminating gluten can stabilize your blood sugar and boost your energy. It can eliminate mental fog, joint pain, gout-like symptoms, constipation and gastric issues like bloating and gas. It can also help you lose stubborn belly fat.  In my case, I noticed the eczema on my hands always disappeared completely whenever I stayed away from gluten bread and pasta and substituted them with gluten free products.
