Raw Pad Thai

Lots of people I spoke to love Pad Thai and recently I spoke to one of my sons and he said he has yet to taste a good proper raw Pad Thai.   Then I thought to myself that if I can make a raw Pad Thai which means the dish is not going to be cooked and therefore since its nutritional value will add to the alkalinity in my body, it will be a real treat!

So this easy raw vegetarian dish uses zucchini for the flat rice "noodles" to create my own version of the Raw Pad Thai!


Ingredients

  • 1 medium zucchini
  • 1 white onion, chopped
  • 1 cup broccoli florets
  • 1 cup bean sprouts 
  • ½ cup chopped fresh coriander/cilantro 
  • ½ cup crushed pine nuts (optional)

Sauce


  • ¼ cup home made tahini (blend 2 tablespoons sesame seeds with 2 tablespoons water)
  • ¼ cup almond butter
  • 2 tbsp lemon juice
  • ¼ cup Liquid aminos or any protein soy sauce
  • 2 tbsp fig paste (mashed/blended dried figs)
  • ½ tsp garlic, minced
  • 1 tsp ginger root, grated


Instructions
  1. You may like to use a spiralizer (or vegetable peeler) to create noodles from the zucchini. Place them in a large mixing bowl and top with the other vegetables. 
  2. Whisk sauce ingredients in a bowl, or use a blender for bigger quantity. The sauce will be thick, but will thin out after it's mixed with the vegetables. 
  3. Pour the sauce over the vegetables and toss.
  4. Serve with nice hot green fresh chillies!
  5. Enjoy!
