So this easy raw vegetarian dish uses zucchini for the flat rice "noodles" to create my own version of the Raw Pad Thai!
Ingredients
- 1 medium zucchini
- 1 white onion, chopped
- 1 cup broccoli florets
- 1 cup bean sprouts
- ½ cup chopped fresh coriander/cilantro
- ½ cup crushed pine nuts (optional)
Sauce
- ¼ cup home made tahini (blend 2 tablespoons sesame seeds with 2 tablespoons water)
- ¼ cup almond butter
- 2 tbsp lemon juice
- ¼ cup Liquid aminos or any protein soy sauce
- 2 tbsp fig paste (mashed/blended dried figs)
- ½ tsp garlic, minced
- 1 tsp ginger root, grated
- You may like to use a spiralizer (or vegetable peeler) to create noodles from the zucchini. Place them in a large mixing bowl and top with the other vegetables.
- Whisk sauce ingredients in a bowl, or use a blender for bigger quantity. The sauce will be thick, but will thin out after it's mixed with the vegetables.
- Pour the sauce over the vegetables and toss.
- Serve with nice hot green fresh chillies!
