SALAD IN DIJON MUSTARD
A big bunch of green leafy leaves
1/2 cup of cut capsicum
1/2 cup of cut onion
Dash of shredded coconut
2 tomatoes cut into quarters
DRESSING
Mix all the ingredients in a blender and pour over the salad just before serving. Enjoy!
1 heap teaspoon Dijon mustard
1/4 cup extra virgin first pressed olive oil
Lemon juice from 1 lemon
Pinch of Salt
