Asian Fusion: Rice Paper Rolls

I love the Vietnamese Rice Paper Rolls, and making them yourself can be a great challenge at the start.  If you persist like I did, this meal has become one of our favourites for my family and our guests!

You can buy rice paper rolls in a pack at Chinese oriental shops or the supermarkets, and follow the instructions on how to use them.

Cut any of the following raw vegetables into strips:
  • Lettuce
  • Capsicum
  • Cucumber
  • Onions
  • Carrots
  • Dried Chinese Mushrooms (soaked in water till they get soft)
  • Wakame, Japanese seaweed salad or Edible seaweed
  • Red chillies
  • Onions

You can also include:
  • Cooked glass noddles/bean thread noodles (also from Chinese oriental shops or the supermarkets, & follow instructions on how to cook them)
  • Edamame

Add Seasoning:
  • Sweet Chilli Sauce
  • Gluten Free Soya Sauce
To roll them:
  • Soak paper roll in warm water, let water drip out, and place on an empty plate.
  • Place a few ingredients at a time along the centre of the roll.
  • Start folding the ingredients from the roll closest to you until they look like these.  As you can see, I had 2 good rolls.
  • Dip your rolls in the sauces.
  • Wala!

It's worth every effort:
If you fail like I did sometimes, just eat them with a fork and spoon, then try again with a clean dry plate.  Practise makes perfect so perhaps this is one of the ways you can work out your patience!
